I'm looking online and cannot for the life of me figure out how to do it...
I can make the starting chain no problem...but how do I create the next line of crochet? I see the "put the hook through the starting chain" thing, but I seem to not be able to do it right, and it all ends up look like a big knot.

For single crochet, you want to go into the second chain from the hook, not counting the one on the hook. Orient your chain so the threads look something like my diagram. Try to just look at the top and ignore what's happening underneath.
The thread towards the bottom of the diagram is the front loop, and the one towards the top is the back loop. For now, you want to push the hook under both of them. There's variations where you just go under the front or the back, or alternate. I haven't done any of that yet.
It is easier to orient the crochet once the first row is done.
