Dinner

Last night I wasn't up to speed on dinner at all. So we tried to find something to make with ground (minced) beef that didn't involve tomatoes. It's harder than you think! But I tripped over a recipe for ground beef stroganoff, which would take care of the defrosted beef, the 1/2 container of soy sour cream in the fridge (with little finger impressions in it...if the kid wasn't allergic to dairy, he'd be a milk addict) and the little tub of frozen mushrooms. Whoo hoo. And it was half decent. We substituted 1/4c of soy plain yogurt and 1/4c. of chicken broth for the cream of chicken soup, then I went and added another Oxo beef cube for flava. That and some garlic and some onion and we were good to go.

Tonight's was Jamie Oliver's Pot Roasted Sweet and Sour Chicken, which is a weekly favorite in the house. It's stupid easy and we always have leftovers.

Now for dessert...well, we'll have that while watching downloaded Gilmore Girls. And I'm pretty sure it's going to be the tub of chocolate frosting I brought back from the states. The only one that I found that was dairy free. Goes great with a cuppa and some custard creams.

I like that Jamie Oliver recipe. Have you been watching his school dinners programme, the mention of him has just reminded me that I forgot to watch it last night.
Isn't chocolate frosting supposed to go on 'top' of a cake or something?

No, we haven't seen anything since we got back from the States. Our NTL box is f'ed up, so changing channels is a bitch. We just watch stuff we download. I should try to notice when it's on tho, cause his Dinners cookbook is quite good. Except for Jool's Favorite Beef Stew. That didn't turn out so hot.

Now you have me craving sweet and sour chicken! My mother used to make a killer sweet and sour when I was a kid, totally from scratch. Since it's just for me, I can't be bothered. My version goes, chop up chicken fillet, add some onion/mushroom/pepper, stirfry, open jar of Uncle Ben's (yeah, has tomatoes), open packet of instant noodles/rice, nuke, serve.

Oh and since DH doesn't eat tomatoes either, we just brown the mince, add a stock cube and herbs, simmer until cooked and then thicken with cornflour. Goes nicely with mashed potatoes, even if you don't make a cottage pie out of it.

I love S&S chicken, but don't have it that often. That sounds yummy. And I like your version too. I didn't know he didn't eat toms.

He doesn't knowingly eat them ;-). He just doesn't like 'em but I can usually sneak a tablespoon of puree into whatever I'm making. His idea of pizza consists of base, cheese and pepperoni!

S doesn't eat tomatoes either - apparently they're "slimy" - though she inhales ketchup :-/.
